Cherry Currant Jam

Ingredients

  • 8 lbs cherries, pitted
  • 2 lbs sugar
  • 4 quarts currant juice (red and white)

Method

  1. 1 Place pitted cherries and half the sugar in a large pan over high heat. Shake frequently until a good amount of liquid is released.
  2. 2 Add the remaining sugar. Skim well and boil rapidly until the syrup reduces significantly.
  3. 3 Stir in the currant juice. Boil quickly, stirring carefully, until the mixture jells.
  4. 4 Remove from heat and immediately pour into sterilized jars or pots.
