Cherry Chocolate Souffle Cake
Ingredients
- ½ lb fine, juicy black cherries
- 5 tbsp fine bread crumbs
- 5 tbsp powdered sugar
- 5 eggs
- 1 oz sweet chocolate, grated
Method
- 1 In a mixing bowl, combine grated chocolate, 1 egg, 1 tbsp bread crumbs, and 1 tbsp sugar; beat until light.
- 2 Add another egg, 1 tbsp bread crumbs, and 1 tbsp sugar; beat well.
- 3 Separate the remaining 3 eggs. Add yolks one at a time, alternating with bread crumbs and sugar until all are used.
- 4 Fold in the cherries.
- 5 Beat the 3 egg whites to stiff peaks and fold lightly into the batter.
- 6 Butter a cake mold, coat with dried bread crumbs, pour in batter, and bake at 350°F for 45 minutes.
