Cherry Brandy Madeleine Baskets

Ingredients

• Madeleine cakes
• White and black stoned cherries
• Cherry brandy or maraschino
• Angelica strips
• One fine stoned cherry

Method

1. 1 Scoop out the centers of the Madeleine cakes to create small baskets.
2. 2 Soak the stoned cherries in cherry brandy or maraschino.
3. 3 Fill the Madeleine baskets with the soaked cherries.
4. 4 Place two long strips of angelica across the top in an X shape.
5. 5 Garnish the center intersection with a single fine stoned cherry.
