Ingredients

  • 12 quarts cherries
  • 3 quarts currants
  • 2 quarts sugar

Method

  1. 1 Boil currants in a preserving kettle, then crush and strain through cheesecloth to extract all juice.
  2. 2 Stem and pit the cherries, saving the juice that escapes.
  3. 3 Combine cherries, reserved fruit juice, extracted currant juice, and sugar in the kettle.
  4. 4 Heat to boiling point, skim carefully, and boil for 20 minutes.
  5. 5 Ladle hot preserve into sterilized jars or tumblers.
