Cherry And Currant Preserves
Ingredients
- 12 quarts cherries
- 3 quarts currants
- 2 quarts sugar
Method
- 1 Boil currants in a preserving kettle, then crush and strain through cheesecloth to extract all juice.
- 2 Stem and pit the cherries, saving the juice that escapes.
- 3 Combine cherries, reserved fruit juice, extracted currant juice, and sugar in the kettle.
- 4 Heat to boiling point, skim carefully, and boil for 20 minutes.
- 5 Ladle hot preserve into sterilized jars or tumblers.
