Cheesy Veggie Stuffed Whole Wheat Pitas

Ingredients

  • 2 medium zucchini, chopped (2 1/2 cups)
  • 1 1/4 cups grated carrots
  • 2 cups chopped broccoli florets
  • 12 ounces low-fat cheddar cheese, grated
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 2 tablespoons vegetable oil
  • 12 whole wheat mini pitas (4 inch)

Method

  1. 1 Chop zucchini, grate carrots, and cut broccoli into small florets. Combine vegetables in a mixing bowl.
  2. 2 Heat vegetable oil in a skillet over medium heat. Add oregano, pepper, garlic powder, and onion powder, then stir in the vegetables. Sauté for 5 minutes until slightly tender.
