Cheesy Veggie Stuffed Whole Wheat Pitas
Ingredients
- 2 medium zucchini, chopped (2 1/2 cups)
- 1 1/4 cups grated carrots
- 2 cups chopped broccoli florets
- 12 ounces low-fat cheddar cheese, grated
- 1/2 teaspoon dried oregano
- 1/4 teaspoon black pepper
- 1/4 teaspoon garlic powder
- 1/4 teaspoon onion powder
- 2 tablespoons vegetable oil
- 12 whole wheat mini pitas (4 inch)
Method
- 1 Chop zucchini, grate carrots, and cut broccoli into small florets. Combine vegetables in a mixing bowl.
- 2 Heat vegetable oil in a skillet over medium heat. Add oregano, pepper, garlic powder, and onion powder, then stir in the vegetables. Sauté for 5 minutes until slightly tender.
- 3 Spoon the warm vegetable mixture into the whole wheat pitas. Top each with grated low-fat cheddar cheese.
