Cheesy Twice Baked Potatoes

Ingredients

  • 6 baked potatoes
  • 3 tbsp hot milk
  • 2 tbsp butter
  • 2 egg whites
  • Salt and pepper to taste
  • Grated cheese (optional)

Method

  1. 1 Cut a slice from the top of each baked potato and scoop out the inside flesh.
  2. 2 Mash the potato flesh with hot milk, butter, salt, and pepper until smooth.
  3. 3 Fold in the well-beaten egg whites.
  4. 4 Refill the potato shells with the mixture and sprinkle with grated cheese if desired.
  5. 5 Bake in a hot oven (425°F) for 5 to 8 minutes until heated through.
