Cheesy Twice Baked Potatoes
Ingredients
- 6 baked potatoes
- 3 tbsp hot milk
- 2 tbsp butter
- 2 egg whites
- Salt and pepper to taste
- Grated cheese (optional)
Method
- 1 Cut a slice from the top of each baked potato and scoop out the inside flesh.
- 2 Mash the potato flesh with hot milk, butter, salt, and pepper until smooth.
- 3 Fold in the well-beaten egg whites.
- 4 Refill the potato shells with the mixture and sprinkle with grated cheese if desired.
- 5 Bake in a hot oven (425°F) for 5 to 8 minutes until heated through.
