Cheesy Tomato Rice Casserole
Ingredients
- 1/2 cup Crisco
- 1/2 cup grated cheese
- 6 tablespoons rice
- 1 can tomatoes
- 5 small onions
- 1 cup hot water
- Salt and red pepper to taste
- 1/4 cup chopped olives
Method
- 1 Wash rice and place in a bowl. Add Crisco, seasonings, cheese, hot water, tomatoes, olives, and chopped onions.
- 2 Transfer mixture to a greased fireproof dish.
- 3 Bake in a moderate oven (350°F) for one hour, or until rice is tender.
