Cheesy Soufflé Mashed Potatoes
Ingredients
- 2 cups hot mashed potatoes
- ½ cup cream or milk
- 2 tablespoons butter
- 1 egg yolk
- 4 egg whites
- Salt and pepper to taste
- Grated Parmesan cheese (optional)
- Butter for baking dish
Method
- 1 Preheat oven to 350°F. In a bowl, mix mashed potatoes, cream, 2 tbsp butter, egg yolk, salt, and pepper until combined.
- 2 Beat egg whites until stiff peaks form. Gently fold the whites into the potato mixture.
- 3 Transfer to a buttered baking dish. Brush the top with beaten egg yolk.
- 4 Bake until golden brown and heated through, about 20-30 minutes. Serve immediately.
