Cheesy Soufflé Mashed Potatoes

Ingredients

  • 2 cups hot mashed potatoes
  • ½ cup cream or milk
  • 2 tablespoons butter
  • 1 egg yolk
  • 4 egg whites
  • Salt and pepper to taste
  • Grated Parmesan cheese (optional)
  • Butter for baking dish

Method

  1. 1 Preheat oven to 350°F. In a bowl, mix mashed potatoes, cream, 2 tbsp butter, egg yolk, salt, and pepper until combined.
  2. 2 Beat egg whites until stiff peaks form. Gently fold the whites into the potato mixture.
  3. 3 Transfer to a buttered baking dish. Brush the top with beaten egg yolk.
  4. 4 Bake until golden brown and heated through, about 20-30 minutes. Serve immediately.
