Cheesy Potato Onion Soup

Ingredients

  • 2 cups cooked diced potatoes
  • 2 cups water (reserved from cooking potatoes)
  • 1 cup milk
  • 2 teaspoons onion juice
  • 2 tablespoons fat
  • 3 tablespoons flour
  • 1.5 teaspoons salt
  • 1/8 teaspoon cayenne
  • 2 tablespoons finely chopped parsley
  • 1/2 cup grated cheese

Method

  1. 1 Dice potatoes and cook slowly until very tender. Reserve the cooking water.
  2. 2 Rub the cooked potatoes through a strainer using 2 cups of the reserved water.
  3. 3 Melt fat in a pot, add dry ingredients (flour, salt, cayenne), then gradually stir in the liquids and onion juice.
  4. 4 When ready to serve, sprinkle parsley and grated cheese over the top.
