Cheesy Potato Onion Soup
Ingredients
- 2 cups cooked diced potatoes
- 2 cups water (reserved from cooking potatoes)
- 1 cup milk
- 2 teaspoons onion juice
- 2 tablespoons fat
- 3 tablespoons flour
- 1.5 teaspoons salt
- 1/8 teaspoon cayenne
- 2 tablespoons finely chopped parsley
- 1/2 cup grated cheese
Method
- 1 Dice potatoes and cook slowly until very tender. Reserve the cooking water.
- 2 Rub the cooked potatoes through a strainer using 2 cups of the reserved water.
- 3 Melt fat in a pot, add dry ingredients (flour, salt, cayenne), then gradually stir in the liquids and onion juice.
- 4 When ready to serve, sprinkle parsley and grated cheese over the top.
