Cheesy Mushroom Stuffed Tomatoes
Ingredients
- ripe middle-sized tomatoes
- salt and pepper
- 1 onion, chopped
- parsley, chopped
- celery, chopped
- 1 piece butter
- small handful dried mushrooms, softened in water and chopped
- 1 tablespoon bread crumbs soaked in milk
- grated cheese
- 1 or 2 egg yolks
- butter and oil for baking
- water for moistening
Method
- 1 Cut tomatoes in half and scoop out seeds. Season with salt and pepper.
- 2 Sauté onion, parsley, and celery in butter until browned. Add chopped mushrooms and simmer.
- 3 Stir in milk-soaked bread crumbs, salt, and pepper. Simmer, adding water if needed.
- 4 Remove from heat. Stir in grated cheese and beaten egg yolks while lukewarm.
- 5 Fill tomato halves with mixture. Bake in oven with butter and oil until heated through.
