Cheesy Mushroom Stuffed Tomatoes

Ingredients

  • ripe middle-sized tomatoes
  • salt and pepper
  • 1 onion, chopped
  • parsley, chopped
  • celery, chopped
  • 1 piece butter
  • small handful dried mushrooms, softened in water and chopped
  • 1 tablespoon bread crumbs soaked in milk
  • grated cheese
  • 1 or 2 egg yolks
  • butter and oil for baking
  • water for moistening

Method

  1. 1 Cut tomatoes in half and scoop out seeds. Season with salt and pepper.
  2. 2 Sauté onion, parsley, and celery in butter until browned. Add chopped mushrooms and simmer.
  3. 3 Stir in milk-soaked bread crumbs, salt, and pepper. Simmer, adding water if needed.
  4. 4 Remove from heat. Stir in grated cheese and beaten egg yolks while lukewarm.
  5. 5 Fill tomato halves with mixture. Bake in oven with butter and oil until heated through.
