Cheesy Mushroom Macaroni

Ingredients

  • 1 tbsp butter
  • 1 tsp lemon juice
  • 12 peeled mushrooms, broken into pieces and blanched
  • 1 ¼ cups milk
  • 2 tbsp butter
  • 2 tbsp flour
  • ¼ lb macaroni, cooked and blanched
  • ¼ cup grated cheese

Method

  1. 1 Melt 1 tbsp butter with lemon juice in a blazer. Add blanched mushrooms and cook slowly, covered, for 5-6 minutes.
  2. 2 Add milk and scald. Stir in 2 tbsp butter and 2 tbsp flour, creamed together, until the sauce boils.
  3. 3 Add cooked macaroni. Heat over hot water and stir in grated cheese just before serving.
