Cheesy Chicken Broccoli Rice Casserole
Ingredients
- 2 1/2 cups water
- 1 cup brown rice
- 1 onion, chopped
- 1 garlic clove, chopped
- 1 cup skim milk
- 1 can (10.75 ounces) condensed cream of mushroom soup, reduced-sodium
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 3/4 cup low-fat cheddar cheese, grated
- 2 cups chicken, cooked, shredded
- 2 cups broccoli, chopped
Method
- 1 Preheat oven to 350°F. In a large saucepan, bring water to a boil.
- 2 Add rice, onion, and garlic to the boiling water. Cook for about 30 minutes or until rice is soft.
- 3 While rice cooks, combine milk, soup, salt, and pepper in a bowl and mix well.
- 4 When rice is done, combine it with the milk mixture, chicken, and broccoli. Mix well.
- 5 Grease a 9x13 pan and pour the mixture into it.
- 6 Bake for 18 minutes. Sprinkle with cheese and bake for another 6 minutes or until cheese is melted.
