Cheesy Bean And Rice Vegetable Soup
Ingredients
- 1 cup potatoes, diced
- 1.5 cups flagolet beans
- 1.5 cups mixed onions, carrots, and celery, finely chopped
- 0.25 lb rice
- 2 oz butter
- 2 oz grated Parmesan cheese
- Salt and pepper to taste
- 1 quart water
Method
- 1 Boil potatoes, beans, onions, carrots, and celery in 1 quart of water until tender.
- 2 Add rice, salt, and pepper. Cook gently until rice is soft, adding more water if necessary.
- 3 Stir in butter and Parmesan cheese. Cook for a few more minutes and serve.
