Cheesy Bean And Rice Vegetable Soup

Ingredients

  • 1 cup potatoes, diced
  • 1.5 cups flagolet beans
  • 1.5 cups mixed onions, carrots, and celery, finely chopped
  • 0.25 lb rice
  • 2 oz butter
  • 2 oz grated Parmesan cheese
  • Salt and pepper to taste
  • 1 quart water

Method

  1. 1 Boil potatoes, beans, onions, carrots, and celery in 1 quart of water until tender.
  2. 2 Add rice, salt, and pepper. Cook gently until rice is soft, adding more water if necessary.
  3. 3 Stir in butter and Parmesan cheese. Cook for a few more minutes and serve.
