Cheesy Baked Hominy Casserole
Ingredients
- large hominy
- 1 ½ cups milk
- 2 tablespoons grated onion
- 4 tablespoons cornstarch
- 2 tablespoons chopped parsley
- 2 teaspoons salt
- 2 ounces cheese
- 1 teaspoon Worcestershire sauce
- 1 teaspoon paprika
Method
- 1 Soak hominy overnight, then wash and cook in plenty of boiling water until tender. Drain well.
- 2 Place hominy in a baking dish.
- 3 Dissolve cornstarch in milk in a saucepan. Add grated onion and bring to a boil.
- 4 Cook slowly for five minutes, then stir in parsley, salt, cheese, Worcestershire sauce, and paprika.
- 5 Heat until cheese melts, then pour over hominy and serve.
