Cheese Stuffed Puff Pastry Strips

Ingredients

  • 1 oz butter
  • 1 whole egg plus 1 yolk
  • 2 oz Parmesan cheese, grated
  • Remains of puff pastry or flaky crust
  • Salt and pepper to taste
  • A pinch of cayenne pepper
  • Extra grated cheese for sprinkling

Method

  1. 1 Cream the butter in a bowl. Beat in the whole egg and yolk, then stir in the grated Parmesan cheese.
  2. 2 Season the mixture with salt, pepper, and a little cayenne. Divide the puff pastry into two portions and roll them out thinly.
  3. 3 Place one piece of pastry on a greased baking sheet. Spread the cheese mixture evenly over the top, then cover with the second piece of pastry.
  4. 4 Mark the top with the back of a knife in strips one inch wide and three inches long. Brush with beaten egg and bake in a 425°F oven until cooked.
  5. 5 Cut out the strips with a sharp knife. Serve on a napkin and sprinkle with extra grated cheese.
