Cheese Stuffed Potato Cakes

Ingredients

  • 1 lb mashed potatoes
  • 4 oz grated cheese
  • 1 oz butter
  • 2 eggs
  • bread crumbs
  • 2 tbsp fine wheatmeal
  • 1/2 tsp mustard
  • salt and pepper to taste

Method

  1. 1 Melt butter and mix with mashed potatoes.
  2. 2 Add cheese, wheatmeal, mustard, salt, pepper, and one beaten egg; mix well.
  3. 3 Form mixture into cakes.
  4. 4 Beat the second egg and coat cakes in egg and bread crumbs.
  5. 5 Fry in oil or butter until brown.
  6. 6 Serve with tomato sauce and green vegetables.
