Cheese Stuffed Potato Cakes
Ingredients
- 1 lb mashed potatoes
- 4 oz grated cheese
- 1 oz butter
- 2 eggs
- bread crumbs
- 2 tbsp fine wheatmeal
- 1/2 tsp mustard
- salt and pepper to taste
Method
- 1 Melt butter and mix with mashed potatoes.
- 2 Add cheese, wheatmeal, mustard, salt, pepper, and one beaten egg; mix well.
- 3 Form mixture into cakes.
- 4 Beat the second egg and coat cakes in egg and bread crumbs.
- 5 Fry in oil or butter until brown.
- 6 Serve with tomato sauce and green vegetables.
