Cheese Stuffed Bread Nests
Ingredients
- stale bread, sliced 1-inch thick
- 1 tablespoon hot water
- 4 tablespoons grated cheese
- 1 oz butter
- bread crumbs
- salt and pepper to taste
- a pinch cayenne pepper
- 1 egg yolk
Method
- 1 Cut bread into 1-inch thick slices and use a circular cutter to stamp out rounds. Scoop out the centers to create small nests or cases.
- 2 Fry the bread nests in hot fat until golden. Drain on kitchen paper, then place in a warm oven to keep hot.
- 3 In a saucepan, bring butter and hot water to a boil. Stir in enough bread crumbs to create a stiff mixture.
- 4 Remove from heat and beat in the egg yolk. Stir in the grated cheese, salt, pepper, and cayenne.
- 5 Pile the cheese mixture into the fried bread nests. Sprinkle with browned bread crumbs and serve immediately while hot.
