Cheese Stuffed Bread Nests

Ingredients

  • stale bread, sliced 1-inch thick
  • 1 tablespoon hot water
  • 4 tablespoons grated cheese
  • 1 oz butter
  • bread crumbs
  • salt and pepper to taste
  • a pinch cayenne pepper
  • 1 egg yolk

Method

  1. 1 Cut bread into 1-inch thick slices and use a circular cutter to stamp out rounds. Scoop out the centers to create small nests or cases.
  2. 2 Fry the bread nests in hot fat until golden. Drain on kitchen paper, then place in a warm oven to keep hot.
  3. 3 In a saucepan, bring butter and hot water to a boil. Stir in enough bread crumbs to create a stiff mixture.
  4. 4 Remove from heat and beat in the egg yolk. Stir in the grated cheese, salt, pepper, and cayenne.
  5. 5 Pile the cheese mixture into the fried bread nests. Sprinkle with browned bread crumbs and serve immediately while hot.
