Cheese Souffle
Ingredients
- 3 oz bread crumbs
- 1 pint milk
- ½ lb grated cheese
- 3 eggs
- 1 oz butter
- Pepper and salt
- A little cayenne
Method
- 1 Place bread crumbs in a basin. Boil milk and pour it over the crumbs to soak.
- 2 Stir in egg yolks, grated cheese, butter, pepper, salt, and cayenne.
- 3 Beat egg whites to stiff peaks and gently fold them into the mixture.
- 4 Pour into a greased pie dish and bake in a 425°F oven until risen and browned.
