Cheese Souffle With Mustard
Ingredients
- 1/4 lb cheese
- 1/8 tsp baking soda
- A speck of cayenne pepper
- 2 tbsp flour
- 1/2 cup milk
- 1 tsp mustard
- 2 eggs
- 2 tbsp butter
Method
- 1 Melt butter in a saucepan. Stir in flour, then slowly add milk, salt, mustard, and cayenne.
- 2 Remove from heat. Stir in well-beaten egg yolks and grated cheese. Cool slightly.
- 3 Fold in stiffly beaten egg whites. Pour into a buttered dish.
- 4 Bake at 350°F for 25-30 minutes. Serve immediately.
