Cheese Souffle With Mustard

Ingredients

  • 1/4 lb cheese
  • 1/8 tsp baking soda
  • A speck of cayenne pepper
  • 2 tbsp flour
  • 1/2 cup milk
  • 1 tsp mustard
  • 2 eggs
  • 2 tbsp butter

Method

  1. 1 Melt butter in a saucepan. Stir in flour, then slowly add milk, salt, mustard, and cayenne.
  2. 2 Remove from heat. Stir in well-beaten egg yolks and grated cheese. Cool slightly.
  3. 3 Fold in stiffly beaten egg whites. Pour into a buttered dish.
  4. 4 Bake at 350°F for 25-30 minutes. Serve immediately.
