Cheese Sauce Cauliflower
Ingredients
- 1 head cauliflower
- 1 tbsp butter
- 1 tbsp flour
- 1 tbsp Gruyère cheese, grated
- Pinch of nutmeg
- Milk, as needed
- 1 tsp feculina flour (or cornstarch)
Method
- 1 Simmer the cauliflower in water until tender. Drain, reserving the cooking liquid.
- 2 In a saucepan, melt butter and whisk in flour to make a roux. Add nutmeg and a splash of the reserved cooking liquid.
- 3 Stir in the Gruyère cheese and milk, heating until smooth. Thicken with feculina flour if necessary.
- 4 Place the cauliflower upright on a serving dish and pour the hot cheese sauce over it immediately.
