Cheese Sauce Cauliflower

Ingredients

  • 1 head cauliflower
  • 1 tbsp butter
  • 1 tbsp flour
  • 1 tbsp Gruyère cheese, grated
  • Pinch of nutmeg
  • Milk, as needed
  • 1 tsp feculina flour (or cornstarch)

Method

  1. 1 Simmer the cauliflower in water until tender. Drain, reserving the cooking liquid.
  2. 2 In a saucepan, melt butter and whisk in flour to make a roux. Add nutmeg and a splash of the reserved cooking liquid.
  3. 3 Stir in the Gruyère cheese and milk, heating until smooth. Thicken with feculina flour if necessary.
  4. 4 Place the cauliflower upright on a serving dish and pour the hot cheese sauce over it immediately.
