  • 2 large eggs
  • 2 tablespoons butter
  • 1/4 cup grated rich cheese
  • Salt and pepper to taste

Method

  1. 1 Crack eggs into a bowl, add cheese, salt, and pepper. Beat vigorously until well combined.
  2. 2 Melt butter in a non-stick frying pan over medium heat.
  3. 3 Pour in the egg mixture. Cook until the bottom is set but the top is still slightly runny.
  4. 4 Fold the omelet in half and slide onto a plate to serve immediately.
