Cheese Macedoine Salad

Ingredients

  • 10-cent cream cheese (approx. 4 oz)
  • 1 canned pimento, cut into tiny cubes
  • 1/4 cup small green string beans, cut into cubes
  • 5 olives, chopped fine
  • Cream, as needed
  • Lettuce leaves
  • French dressing
  • Mayonnaise (optional, for serving)

Method

  1. 1 In a bowl, combine the cream cheese, diced pimento, cubed string beans, and chopped olives.
  2. 2 Add enough cream to the mixture to bind it together, then mix thoroughly until well combined.
  3. 3 Shape the mixture into its original form using paraffin or wax paper, then wrap and chill in a cold place until ready to serve.
  4. 4 Line a salad dish with lettuce leaves and place the chilled cheese mixture in the center.
  5. 5 Dress with French dressing and slice the cheese with a silver knife before serving. Serve mayonnaise on the side if desired.
