Cheese Macedoine Salad
Ingredients
- 10-cent cream cheese (approx. 4 oz)
- 1 canned pimento, cut into tiny cubes
- 1/4 cup small green string beans, cut into cubes
- 5 olives, chopped fine
- Cream, as needed
- Lettuce leaves
- French dressing
- Mayonnaise (optional, for serving)
Method
- 1 In a bowl, combine the cream cheese, diced pimento, cubed string beans, and chopped olives.
- 2 Add enough cream to the mixture to bind it together, then mix thoroughly until well combined.
- 3 Shape the mixture into its original form using paraffin or wax paper, then wrap and chill in a cold place until ready to serve.
- 4 Line a salad dish with lettuce leaves and place the chilled cheese mixture in the center.
- 5 Dress with French dressing and slice the cheese with a silver knife before serving. Serve mayonnaise on the side if desired.
