Ingredients

  • 1 cup water
  • 2 tablespoons butter
  • 1 cup flour
  • 3/4 cup grated cheese
  • 6 eggs

Method

  1. 1 Combine water and butter in a saucepan over heat. Stir in flour to form a thick batter, cooking and stirring until the mixture pulls away from the pan.
  2. 2 Transfer the mixture to a bowl. Stir in the grated cheese until well combined.
  3. 3 Add eggs one at a time, beating well after each addition until the batter is light and fluffy.
  4. 4 Drop small lumps of batter onto buttered parchment paper. Bake in a 425°F oven until golden brown.
