Cheese Dumplings In Clear Soup
Ingredients
- 3 quarts clear soup stock
- 1 1/2 cups flour
- 4 tbsp Crisco
- 2 cups cream
- 4 tbsp grated cheese
- 2 eggs
- Salt, pepper, and paprika to taste
- Finely grated cheese for serving
Method
- 1 In a double boiler, combine flour, cream, Crisco, 4 tbsp grated cheese, and paprika. Stir over heat until a smooth paste forms.
- 2 Remove from heat, break in eggs, and mix well. Cook for two more minutes, then allow the mixture to cool slightly.
- 3 Roll the mixture into small balls. Drop them into boiling water and cook gently for five minutes.
- 4 Drain the dumplings and place them in a soup tureen. Pour boiling stock over them and serve with finely grated cheese on the side.
