Cheese Dumplings In Clear Soup

Ingredients

  • 3 quarts clear soup stock
  • 1 1/2 cups flour
  • 4 tbsp Crisco
  • 2 cups cream
  • 4 tbsp grated cheese
  • 2 eggs
  • Salt, pepper, and paprika to taste
  • Finely grated cheese for serving

Method

  1. 1 In a double boiler, combine flour, cream, Crisco, 4 tbsp grated cheese, and paprika. Stir over heat until a smooth paste forms.
  2. 2 Remove from heat, break in eggs, and mix well. Cook for two more minutes, then allow the mixture to cool slightly.
  3. 3 Roll the mixture into small balls. Drop them into boiling water and cook gently for five minutes.
  4. 4 Drain the dumplings and place them in a soup tureen. Pour boiling stock over them and serve with finely grated cheese on the side.
