Cheese Crispy Spinach Omelet Strips

Ingredients

  • 1 bunch spinach
  • 2 eggs
  • Salt and pepper
  • Oil for frying
  • Butter
  • Grated cheese

Method

  1. 1 Boil spinach, rub through a sieve, and set aside.
  2. 2 Beat eggs with salt and pepper, then mix in enough spinach to turn the mixture green.
  3. 3 Heat oil in a frying pan until very hot, then pour in a portion of the egg mixture to form a thin omelet.
  4. 4 Cook until well done, remove from pan, and repeat to make two or three thin omelets.
  5. 5 Stack omelets, cut into small strips, and brown in butter with grated cheese.
