Cheese And Vegetable Baking Mix Quiche

Ingredients

  • 1/2 cup vegetable oil
  • 2 cups chopped onion
  • 1 cup vegetables (frozen, fresh, or leftovers)
  • 3 cups shredded low-fat cheddar cheese
  • 1 1/2 cups eggs
  • 3/4 cup 1% milk
  • baking mix (like Bisquick)

Method

  1. 1 Cook onion in oil, or cook with vegetables. Drain well.
  2. 2 Grease a round pie pan or 8x8 inch baking dish.
  3. 3 Spread cooked vegetables in the pan, then top with cheese.
  4. 4 Mix milk, eggs, and baking mix. Pour over vegetables and cheese.
  5. 5 Bake at 350°F for 35 minutes until a knife inserted comes out clean.
