Cheese And Vegetable Baking Mix Quiche
Ingredients
- 1/2 cup vegetable oil
- 2 cups chopped onion
- 1 cup vegetables (frozen, fresh, or leftovers)
- 3 cups shredded low-fat cheddar cheese
- 1 1/2 cups eggs
- 3/4 cup 1% milk
- baking mix (like Bisquick)
Method
- 1 Cook onion in oil, or cook with vegetables. Drain well.
- 2 Grease a round pie pan or 8x8 inch baking dish.
- 3 Spread cooked vegetables in the pan, then top with cheese.
- 4 Mix milk, eggs, and baking mix. Pour over vegetables and cheese.
- 5 Bake at 350°F for 35 minutes until a knife inserted comes out clean.
