Cheese And Mustard Egg Tartlets
Ingredients
- 4 eggs
- 4 oz grated cheese
- 1 oz butter
- 1 tsp mustard
- ¼ cup cream
- pepper and salt to taste
- 6 oz fine wheatmeal (flour)
- 2 oz butter
- water
Method
- 1 Whip 4 eggs, adding 2 tsp water to each. Dissolve mustard in a little water.
- 2 Heat 1 oz butter in a pan. Stir in egg, cheese, mustard, and seasoning mixture. Cook until set, then cool in a bowl.
- 3 Rub 2 oz butter into 6 oz wheatmeal. Add enough water to form a dough.
- 4 Line small patty pans with pastry. Fill with cooled egg mixture. Cover with pastry, sealing edges.
- 5 Bake at 400°F for 15-20 minutes until golden and done.
