Cheese And Butter Scrambled Eggs
Ingredients
- 5 eggs
- 1 cup grated Swiss or mild American cheese
- ½ teaspoon salt
- ¼ teaspoon white pepper
- 3 tablespoons butter, cut into bits
- Hot buttered toast, for serving
Method
- 1 Beat 5 eggs in a bowl until light and fluffy.
- 2 Add grated cheese, salt, pepper, and butter bits to the eggs.
- 3 Cook the mixture in a double boiler, stirring constantly, until the cheese melts and the mixture thickens like custard.
- 4 Pour immediately over hot buttered toast and serve.
