Cheese And Butter Puffs
Ingredients
- 1/4 cup water
- 1/4 tsp salt
- 1 cup butter, divided
- 3 large eggs
- 3 large eggs
- 1 cup grated Parmesan cheese
- 2 egg yolks
- 6 large eggs
Method
- 1 Warm water and salt gently in a saucepan without boiling. Remove from heat and stir in 1/2 cup butter until melted. Let cool completely.
- 2 Whisk in 3 eggs one at a time until smooth. Add remaining 3 eggs and Parmesan cheese, beating well.
- 3 Beat in 2 egg yolks and remaining 1/2 cup cold butter. Beat until fully combined.
- 4 Just before baking, beat 6 eggs to a froth and fold into the batter.
- 5 Pour into paper molds and bake in a 425°F oven until puffed and golden. Serve immediately while hot.
