Cheese And Butter Puffs

Ingredients

  • 1/4 cup water
  • 1/4 tsp salt
  • 1 cup butter, divided
  • 3 large eggs
  • 3 large eggs
  • 1 cup grated Parmesan cheese
  • 2 egg yolks
  • 6 large eggs

Method

  1. 1 Warm water and salt gently in a saucepan without boiling. Remove from heat and stir in 1/2 cup butter until melted. Let cool completely.
  2. 2 Whisk in 3 eggs one at a time until smooth. Add remaining 3 eggs and Parmesan cheese, beating well.
  3. 3 Beat in 2 egg yolks and remaining 1/2 cup cold butter. Beat until fully combined.
  4. 4 Just before baking, beat 6 eggs to a froth and fold into the batter.
  5. 5 Pour into paper molds and bake in a 425°F oven until puffed and golden. Serve immediately while hot.
