Cheddar Cheese Spread With Curry
Ingredients
- 1 lb Cheddar, Cheshire, or North Wiltshire cheese
- 2 oz fresh butter
- 3 oz fresh butter (if cheese is dry)
- curry powder, ground spice, black pepper, cayenne, or made mustard (optional)
- sherry (optional)
Method
- 1 Cut the cheese into thin bits.
- 2 Add the butter to the cheese.
- 3 Pound and rub the mixture in a mortar until completely smooth.
- 4 Optional: Mix in spices, mustard, or sherry to taste.
- 5 Press into a jar, cover with clarified butter, and store in a cool place.
