Celery Walnut Tea Sandwiches

Ingredients

  • dainty little baking powder biscuits, freshly baked but cold, OR white homemade bread
  • very tender celery, chopped fine
  • iced water (for soaking celery)
  • walnuts, chopped
  • mayonnaise dressing
  • butter

Method

  1. 1 Chop the tender celery fine and soak in iced water until needed.
  2. 2 Drain the celery and mix with chopped walnuts and enough mayonnaise to hold together.
  3. 3 Butter the bread slices. If using biscuits, split and butter them.
  4. 4 Spread the celery mixture on one slice and press another on top. Ensure sandwiches are small and very thin.
  5. 5 If using biscuits, brown them delicately before assembling.
