Celery Walnut Tea Sandwiches
Ingredients
- dainty little baking powder biscuits, freshly baked but cold, OR white homemade bread
- very tender celery, chopped fine
- iced water (for soaking celery)
- walnuts, chopped
- mayonnaise dressing
- butter
Method
- 1 Chop the tender celery fine and soak in iced water until needed.
- 2 Drain the celery and mix with chopped walnuts and enough mayonnaise to hold together.
- 3 Butter the bread slices. If using biscuits, split and butter them.
- 4 Spread the celery mixture on one slice and press another on top. Ensure sandwiches are small and very thin.
- 5 If using biscuits, brown them delicately before assembling.
