Celery Seed Oyster Broth
Ingredients
- 1 quart oysters in their own liquor
- 1 quart water
- 1 teaspoon celery seed
- 1 tablespoon butter
- Salt and pepper to taste
Method
- 1 Bring oysters and their liquor to a boil in a pot.
- 2 Remove oysters, chop them finely, and return them to the liquid.
- 3 Add water, celery seed, and butter to the pot.
- 4 Simmer for 30 minutes, then strain through cheesecloth.
- 5 Season with salt and pepper and serve immediately.
