Celery Seed Oyster Broth

Ingredients

  • 1 quart oysters in their own liquor
  • 1 quart water
  • 1 teaspoon celery seed
  • 1 tablespoon butter
  • Salt and pepper to taste

Method

  1. 1 Bring oysters and their liquor to a boil in a pot.
  2. 2 Remove oysters, chop them finely, and return them to the liquid.
  3. 3 Add water, celery seed, and butter to the pot.
  4. 4 Simmer for 30 minutes, then strain through cheesecloth.
  5. 5 Season with salt and pepper and serve immediately.
