Celery Potato Croquettes
Ingredients
- 1 pound mashed potatoes
- 1 medium head of celery
- 1 ounce butter or frying oil
- 1/2 teaspoon salt
- Black pepper to taste
- Egg for coating
- Breadcrumbs for coating
Method
- 1 Wash the celery, cut into pieces, and stew in just enough water to cover for 30 minutes. Strain and reserve the liquid.
- 2 Chop the cooked celery very finely and mix it thoroughly with the mashed potatoes, salt, and pepper.
- 3 Roll the mixture into small balls or cakes.
- 4 For frying in oil, dip the balls in beaten egg and then coat with breadcrumbs. Fry in hot oil until golden brown.
- 5 Alternatively, fry the uncoated balls in butter until nicely browned.
