Celery Mayo Stuffed Tomatoes
Ingredients
- round tomatoes, peeled and seeded
- celery, chopped fine
- mayonnaise
- lettuce leaves
- celery ends
- parsley sprigs
- toasted cheese, biscuits, or salted wafers (for serving)
Method
- 1 Peel the tomatoes and scoop out the seeds from the stem end.
- 2 Chop the celery fine and mix it thoroughly with mayonnaise.
- 3 Place the hollowed tomatoes on ice until shortly before serving.
- 4 Fill the tomatoes generously with the celery and mayonnaise mixture.
- 5 Arrange filled tomatoes on lettuce leaves and garnish with celery ends and parsley.
