Celery Egg Salad Sandwiches
Ingredients
- 4 large eggs
- 1 head celery (white portion only)
- 1/2 tsp salt
- Dash of black pepper
- Bread slices
- Mayonnaise dressing
Method
- 1 Place eggs in warm water and bring to a boil. Remove from heat and let sit for 15 minutes to hard-boil.
- 2 Peel the celery white portion, wash, and chop finely. Peel the eggs and chop or press them finely.
- 3 Mix the chopped eggs and celery together. Stir in the salt and pepper until well combined.
- 4 Butter bread slices. Spread a layer of the egg-celery mixture on each slice, then top with a teaspoon of mayonnaise.
- 5 Top with another slice of bread and press lightly. Trim crusts and cut into 2-inch wide rectangles.
