Celery Egg Salad Sandwiches

Ingredients

  • 4 large eggs
  • 1 head celery (white portion only)
  • 1/2 tsp salt
  • Dash of black pepper
  • Bread slices
  • Mayonnaise dressing

Method

  1. 1 Place eggs in warm water and bring to a boil. Remove from heat and let sit for 15 minutes to hard-boil.
  2. 2 Peel the celery white portion, wash, and chop finely. Peel the eggs and chop or press them finely.
  3. 3 Mix the chopped eggs and celery together. Stir in the salt and pepper until well combined.
  4. 4 Butter bread slices. Spread a layer of the egg-celery mixture on each slice, then top with a teaspoon of mayonnaise.
  5. 5 Top with another slice of bread and press lightly. Trim crusts and cut into 2-inch wide rectangles.
