Celery And Onion Soup With Vermicelli

Ingredients

  • 1 large head celery (or 2 small heads)
  • 1 large Spanish onion
  • 2 oz butter
  • Salt and pepper to taste
  • 1 blade mace
  • 4 pints water
  • 1 oz vermicelli, sago, or Italian pasta
  • Sippets of wholemeal toast

Method

  1. 1 Chop the onion and fry it brown in the butter in a saucepan.
  2. 2 Add the water, celery pieces, mace, salt, and pepper.
  3. 3 Cook until the celery is quite soft, then drain the liquid from the vegetables.
  4. 4 Return the liquid to the saucepan, bring to a boil, and add the vermicelli or pasta.
  5. 5 Cook until the pasta is soft and serve with toast sippets.
