Celery And Onion Soup With Vermicelli
Ingredients
- 1 large head celery (or 2 small heads)
- 1 large Spanish onion
- 2 oz butter
- Salt and pepper to taste
- 1 blade mace
- 4 pints water
- 1 oz vermicelli, sago, or Italian pasta
- Sippets of wholemeal toast
Method
- 1 Chop the onion and fry it brown in the butter in a saucepan.
- 2 Add the water, celery pieces, mace, salt, and pepper.
- 3 Cook until the celery is quite soft, then drain the liquid from the vegetables.
- 4 Return the liquid to the saucepan, bring to a boil, and add the vermicelli or pasta.
- 5 Cook until the pasta is soft and serve with toast sippets.
