Cayenne Bacon Potato Casserole

Ingredients

  • 2 cups pared and sliced potatoes
  • 2 tablespoons bacon drippings
  • 2 tablespoons minced onion
  • 1/2 teaspoon salt
  • 1/2 tablespoon cayenne
  • 1 1/2 cups boiling water
  • 1 tablespoon chopped green pepper or pimento

Method

  1. 1 Melt bacon drippings in a pan. Add minced onion and cook until slightly brown.
  2. 2 Add salt, cayenne, and boiling water. Stir to combine.
  3. 3 Pour the mixture over the sliced potatoes in an oven-safe dish.
