Cayenne Bacon Potato Casserole
Ingredients
- 2 cups pared and sliced potatoes
- 2 tablespoons bacon drippings
- 2 tablespoons minced onion
- 1/2 teaspoon salt
- 1/2 tablespoon cayenne
- 1 1/2 cups boiling water
- 1 tablespoon chopped green pepper or pimento
Method
- 1 Melt bacon drippings in a pan. Add minced onion and cook until slightly brown.
- 2 Add salt, cayenne, and boiling water. Stir to combine.
- 3 Pour the mixture over the sliced potatoes in an oven-safe dish.
- 4 Cook slowly in the oven until potatoes are tender, about 30 minutes.
