Cauliflower, Pea, And Bean Stew

Ingredients

  • 1 pound cooked haricot beans
  • 1 pint fresh green peas
  • 1 small cauliflower
  • 6 small onions
  • 1 pint haricot bean stock
  • 1 ounce butter
  • 1/2 ounce flour
  • Juice of half a lemon
  • Salt and pepper to taste

Method

  1. 1 Dissolve butter in a stewpan.
  2. 2 Peel and halve onions; fry for 10 minutes without browning.
  3. 3 Stir in flour, then add peas and stock; simmer until vegetables are tender.
  4. 4 Add beans, lemon juice, and seasonings; boil cauliflower separately.
  5. 5 Break up cooked cauliflower into pieces and add to stew.
  6. 6 Simmer everything together for a few minutes and serve hot.
