Cauliflower, Pea, And Bean Stew
Ingredients
- 1 pound cooked haricot beans
- 1 pint fresh green peas
- 1 small cauliflower
- 6 small onions
- 1 pint haricot bean stock
- 1 ounce butter
- 1/2 ounce flour
- Juice of half a lemon
- Salt and pepper to taste
Method
- 1 Dissolve butter in a stewpan.
- 2 Peel and halve onions; fry for 10 minutes without browning.
- 3 Stir in flour, then add peas and stock; simmer until vegetables are tender.
- 4 Add beans, lemon juice, and seasonings; boil cauliflower separately.
- 5 Break up cooked cauliflower into pieces and add to stew.
- 6 Simmer everything together for a few minutes and serve hot.
