Cauliflower Mac And Cheese

Ingredients

  • 8 cups whole wheat pasta shells
  • 6 cups water
  • 2 cups chopped cauliflower
  • 1 1/2 cups milk, non-fat
  • 1 teaspoon garlic salt
  • 1/4 cup flour
  • 1/4 cup vegetable oil
  • 1 cup cheese, low-fat

Method

  1. 1 Boil 6 cups water, cook pasta shells for 8 minutes, then drain.
  2. 2 Boil 2 cups water, cook chopped cauliflower until soft (4 minutes), then drain.
  3. 3 Blend cauliflower, 1/2 cup milk, and garlic salt until smooth.
  4. 4 Heat oil in a pot, whisk in flour until smooth, then add remaining 1 cup milk and cook until thickened.
  5. 5 Stir in cheese and blended cauliflower mixture, then toss with pasta and serve.
