Cauliflower Mac And Cheese
Ingredients
- 8 cups whole wheat pasta shells
- 6 cups water
- 2 cups chopped cauliflower
- 1 1/2 cups milk, non-fat
- 1 teaspoon garlic salt
- 1/4 cup flour
- 1/4 cup vegetable oil
- 1 cup cheese, low-fat
Method
- 1 Boil 6 cups water, cook pasta shells for 8 minutes, then drain.
- 2 Boil 2 cups water, cook chopped cauliflower until soft (4 minutes), then drain.
- 3 Blend cauliflower, 1/2 cup milk, and garlic salt until smooth.
- 4 Heat oil in a pot, whisk in flour until smooth, then add remaining 1 cup milk and cook until thickened.
- 5 Stir in cheese and blended cauliflower mixture, then toss with pasta and serve.
