  • 3 ounces white part of cauliflower, chopped very fine
  • 0.5 ounce butter
  • 3 eggs
  • 0.5 teaspoon salt
  • 0.5 teaspoon pepper
  • 0.5 ounce butter

Method

  1. 1 Beat eggs well, separating whites and yolks.
  2. 2 Add potatoes, chopped cauliflower, and seasonings to the yolks; stir well.
  3. 3 Fill greased small patty pans with the mixture.
  4. 4 Bake in a moderate oven (350°F) for 30 minutes.
  5. 5 Top with a small knob of butter to help brown.
