Cauliflower And Potato Souffles
Ingredients
- 3 ounces mashed potatoes
- 3 ounces white part of cauliflower, chopped very fine
- 0.5 ounce butter
- 3 eggs
- 0.5 teaspoon salt
- 0.5 teaspoon pepper
- 0.5 ounce butter
Method
- 1 Beat eggs well, separating whites and yolks.
- 2 Add potatoes, chopped cauliflower, and seasonings to the yolks; stir well.
- 3 Fill greased small patty pans with the mixture.
- 4 Bake in a moderate oven (350°F) for 30 minutes.
- 5 Top with a small knob of butter to help brown.
