Cauliflower And Potato Salad
Ingredients
- 1 medium cauliflower, boiled and cooled
- 3 potatoes, boiled and cooled
- Juice of 1/2 lemon
- 2-3 tablespoons oil
- Salt and pepper to taste
- Mayonnaise (optional)
Method
- 1 Boil the cauliflower and potatoes until tender. Allow them to cool completely.
- 2 Cut the cooled cauliflower and potatoes into small, fine pieces.
- 3 Whisk together the lemon juice, oil, salt, and pepper to create a dressing.
- 4 Toss the chopped vegetables with the dressing until well coated. Add mayonnaise if desired.
