Carrot Haricot Bean And Celery Soup

Ingredients

  • 1 pint haricot beans
  • 5 pints water
  • 2 ounces butter
  • 1 ounce salt
  • 6 large carrots
  • 2 large onions
  • 1 small head of celery
  • 1 teaspoon peppercorns

Method

  1. 1 Dissolve butter in a large saucepan over medium heat.
  2. 2 Slice carrots, onions, and celery. Add vegetables, water, and peppercorns to the saucepan.
  3. 3 Simmer for one hour.
  4. 4 Add salt and simmer for another hour and a half.
  5. 5 Strain the soup before serving.
