Carrot Haricot Bean And Celery Soup
Ingredients
- 1 pint haricot beans
- 5 pints water
- 2 ounces butter
- 1 ounce salt
- 6 large carrots
- 2 large onions
- 1 small head of celery
- 1 teaspoon peppercorns
Method
- 1 Dissolve butter in a large saucepan over medium heat.
- 2 Slice carrots, onions, and celery. Add vegetables, water, and peppercorns to the saucepan.
- 3 Simmer for one hour.
- 4 Add salt and simmer for another hour and a half.
- 5 Strain the soup before serving.
