Caribbean Tilapia With Roasted Vegetables And Pears
Ingredients
- 2 small red potatoes
- 2 small Yukon potatoes
- 1/2 cup yellow bell pepper, cut into 1-inch chunks
- 1 cup green beans
- 1 Roma tomato, cut into wedges
- 2 tablespoons chopped white onion
- 1 clove garlic, minced
- 1/2 teaspoon cumin
- 1/4 teaspoon salt
- 1 tablespoon olive oil
- 1 pound tilapia fillets
- 1 tablespoon olive oil
- 2 teaspoons salt-free Caribbean citrus seasoning blend
- 3 medium D'Anjou pears
Method
- 1 Heat oven to 425°F. Scrub and chop potatoes into 1-inch chunks.
- 2 Toss potatoes, bell pepper, green beans, tomato, onion, garlic, cumin, salt, and 1 tablespoon olive oil in a bowl. Spread in a baking dish and roast for 30-40 minutes until tender.
- 3 Brush tilapia fillets with 1 tablespoon olive oil and coat with seasoning blend.
- 4 Cut pears into thin wedges. Place fish on foil squares, top with pear wedges, and seal into packets.
- 5 Place packets on a baking sheet and bake for 20 minutes until fish reaches 145°F and pears are tender.
- 6 Serve fish and pears from packets alongside the roasted vegetables.
