Cardamom Cream of Wheat Fudge

Ingredients

  • 1 cup cream of wheat
  • 1/2 cup butter or Crisco
  • 3 cups water
  • 1 cup sugar
  • seeds from a few cardamom pods
  • minced nuts, for topping
  • raisins, optional

Method

  1. 1 Fry the cream of wheat in butter or Crisco over medium heat until it has a nutty flavor and is slightly brown.
  2. 2 Add water, sugar, and cardamom seeds. Boil slowly, stirring, until the mixture forms a thick, rich paste.
  3. 3 Press the hot mixture into square cake pans. Sprinkle the top with minced nuts and raisins if desired.
  4. 4 Allow to cool and set, then cut into squares like fudge before serving.
