Cardamom Cream of Wheat Fudge
Ingredients
- 1 cup cream of wheat
- 1/2 cup butter or Crisco
- 3 cups water
- 1 cup sugar
- seeds from a few cardamom pods
- minced nuts, for topping
- raisins, optional
Method
- 1 Fry the cream of wheat in butter or Crisco over medium heat until it has a nutty flavor and is slightly brown.
- 2 Add water, sugar, and cardamom seeds. Boil slowly, stirring, until the mixture forms a thick, rich paste.
- 3 Press the hot mixture into square cake pans. Sprinkle the top with minced nuts and raisins if desired.
- 4 Allow to cool and set, then cut into squares like fudge before serving.
