Cardamom Almond Pudding

Ingredients

  • 2.5 oz butter
  • 0.25 cup rich milk
  • 1.5 oz flour
  • 0.5 cup milk
  • 1 oz sugar
  • 1 oz almonds, blanched and pounded fine
  • 12 cardamom seeds
  • 3 eggs, well beaten
  • 0.5 tsp almond extract
  • fine bread crumbs, for greasing mold

Method

  1. 1 Melt butter in 0.25 cup milk over heat. Stir in flour mixed with 0.5 cup milk to form a smooth paste; cook until it leaves the pan sides.
  2. 2 Remove from heat. When cool, stir in sugar, pounded almonds, cardamom seeds, eggs, and almond extract until well combined.
  3. 3 Pour into a buttered pudding mold dusted with bread crumbs. Cover and place in a pan of boiling water in a 350°F oven.
  4. 4 Bake for 30-35 minutes. Turn out onto a plate and serve immediately with fruit or wine sauce.
