Cardamom Almond Pudding
Ingredients
- 2.5 oz butter
- 0.25 cup rich milk
- 1.5 oz flour
- 0.5 cup milk
- 1 oz sugar
- 1 oz almonds, blanched and pounded fine
- 12 cardamom seeds
- 3 eggs, well beaten
- 0.5 tsp almond extract
- fine bread crumbs, for greasing mold
Method
- 1 Melt butter in 0.25 cup milk over heat. Stir in flour mixed with 0.5 cup milk to form a smooth paste; cook until it leaves the pan sides.
- 2 Remove from heat. When cool, stir in sugar, pounded almonds, cardamom seeds, eggs, and almond extract until well combined.
- 3 Pour into a buttered pudding mold dusted with bread crumbs. Cover and place in a pan of boiling water in a 350°F oven.
- 4 Bake for 30-35 minutes. Turn out onto a plate and serve immediately with fruit or wine sauce.
