Caraway Seed Currant Pound Cake
Ingredients
- 1 cup butter, softened
- 2 cups granulated sugar
- 4 large egg yolks
- 4 large egg whites
- 2 cups all-purpose flour
- 1 tsp caraway seeds
- ½ cup currants
Method
- 1 Preheat oven to 350°F. Grease and flour a 9x5 inch loaf pan.
- 2 Cream the butter and sugar together until light and fluffy.
- 3 Beat in the egg yolks one at a time, mixing well after each addition.
- 4 Whisk the egg whites until stiff peaks form, then gently fold them into the batter.
- 5 Fold in the flour, caraway seeds, and currants until just combined.
- 6 Pour into the prepared pan and bake for 50-60 minutes, or until a toothpick comes out clean.
