Caraway Seed Brandy Tea Cakes
Ingredients
- 4 oz loaf sugar, finely powdered
- 4 oz butter
- 8 oz flour, dried
- 1 walnut-shellful caraway seeds, bruised
- 1 egg
- 1 tbsp brandy
- 1 egg white, beaten
- Fine sugar for grating
Method
- 1 Work sugar, butter, flour, caraway seeds, egg, and brandy together into a paste.
- 2 Roll the paste to the thickness of a half-crown and cut with a tea-cup.
- 3 Place cakes on a floured tin.
- 4 Brush with beaten egg white and grate fine sugar on top.
- 5 Bake in a slow oven (300°F) until very pale brown.
