Caraway Seed Brandy Tea Cakes

Ingredients

  • 4 oz loaf sugar, finely powdered
  • 4 oz butter
  • 8 oz flour, dried
  • 1 walnut-shellful caraway seeds, bruised
  • 1 egg
  • 1 tbsp brandy
  • 1 egg white, beaten
  • Fine sugar for grating

Method

  1. 1 Work sugar, butter, flour, caraway seeds, egg, and brandy together into a paste.
  2. 2 Roll the paste to the thickness of a half-crown and cut with a tea-cup.
  3. 3 Place cakes on a floured tin.
  4. 4 Brush with beaten egg white and grate fine sugar on top.
  5. 5 Bake in a slow oven (300°F) until very pale brown.
