Caramelized Onion And Thyme Gravy

Ingredients

  • 1 onion, chopped
  • 1 sprig thyme
  • 1 tbsp butter
  • 1 tsp moist sugar
  • 1 tsp water
  • 1 pint water
  • Salt and pepper to taste

Method

  1. 1 Chop the onion and fry it with the thyme and butter in a pan until browned.
  2. 2 Add the sugar and a drop of water, then boil over heat until the water reduces and the sugar caramelizes to a dark brown color.
  3. 3 Stir the caramelized sugar mixture over heat for three additional minutes.
  4. 4 Moisten with a pint of water, add salt and pepper, and boil for five minutes.
  5. 5 Strain the gravy and serve over the fowl.
