Caramelized Onion And Thyme Gravy
Ingredients
- 1 onion, chopped
- 1 sprig thyme
- 1 tbsp butter
- 1 tsp moist sugar
- 1 tsp water
- 1 pint water
- Salt and pepper to taste
Method
- 1 Chop the onion and fry it with the thyme and butter in a pan until browned.
- 2 Add the sugar and a drop of water, then boil over heat until the water reduces and the sugar caramelizes to a dark brown color.
- 3 Stir the caramelized sugar mixture over heat for three additional minutes.
- 4 Moisten with a pint of water, add salt and pepper, and boil for five minutes.
- 5 Strain the gravy and serve over the fowl.
