Caramel Custard Ice Cream
Ingredients
- 1/2 cup sugar
- 1 tablespoon water
- 1 quart milk
- 1/2 cup sugar
- 3 small spoonfuls cornstarch
- cold water
- 1 pinch salt
- 3 eggs, well-beaten
- caramel (from 1/2 cup sugar and 1 tablespoon water)
- chopped nuts (optional)
Method
- 1 Cook 1/2 cup sugar with 1 tablespoon water until dark brown, stirring constantly.
- 2 Heat 1 quart milk with 1/2 cup sugar. Thicken while stirring with cornstarch rubbed smooth with a little cold water.
- 3 Add salt, beaten eggs, and the prepared caramel. Bring to a boil.
- 4 Strain, cool, and freeze. Add chopped nuts if desired.
