Caramel Custard Ice Cream

Ingredients

  • 1/2 cup sugar
  • 1 tablespoon water
  • 1 quart milk
  • 1/2 cup sugar
  • 3 small spoonfuls cornstarch
  • cold water
  • 1 pinch salt
  • 3 eggs, well-beaten
  • caramel (from 1/2 cup sugar and 1 tablespoon water)
  • chopped nuts (optional)

Method

  1. 1 Cook 1/2 cup sugar with 1 tablespoon water until dark brown, stirring constantly.
  2. 2 Heat 1 quart milk with 1/2 cup sugar. Thicken while stirring with cornstarch rubbed smooth with a little cold water.
  3. 3 Add salt, beaten eggs, and the prepared caramel. Bring to a boil.
  4. 4 Strain, cool, and freeze. Add chopped nuts if desired.
