Capon Meatball Soup With Liver And Gizzards
Ingredients
- 2 capons
- Spices of choice
- 2 eggs
- Capons' cooking broth
- Flour
- Water
- Chicken livers and gizzards
- Green herbs
- Vinegar
- Sugar
Method
- 1 Boil the capons with your chosen spices until cooked through.
- 2 Shred the cooked capon meat into a bowl and mix with beaten eggs and some of the cooking broth.
- 3 Stir in flour to thicken the mixture slightly.
- 4 Return the mixture to the remaining broth and simmer briefly until heated through.
